We have a couple of days off school this week for the extreme cold weather, so I have some time to post a few recipes. Here is the first one, the link is at the bottom of this post of where I found this recipe.
Ingredients:
Low Carb Zucchini Waffles
Ingredients:
- 1 1/2 c shredded zucchini
- 1/2 tsp salt
- 1 1/2 c almond flour
- 1/2 c flax seed meal
- 1/4 c Sweetener
- 1 Tbsp baking powder
- 1 1/2 tsp cinnamon
- 1/2 tsp ginger
- 2 eggs
- 2 egg whites
- 1/4 c oil
- 1/4 c water
- 1/2 tsp vanilla
Directions:
- Shred the zucchini, sprinkle with salt. Let drain for 1 hour, then press to excess moisture out.
- Preheat waffle iron. I grease between every waffle since these tend to stick a lot (at least in my waffle iron).
- Mix together dry ingredients.
- Add the wet ingredients. Mix well.
- Spoon the batter onto your waffle iron and cook according to your waffle iron).
I usually get about 8 waffle squares from this. One waffle square is pretty filling and thick. I often make scrambled eggs to go with this to use up the yolks that were left from making it.
In my experience, the waffles tend to stick to the iron, so I grease it a lot and between each waffle. It does help if you let the zucchini drain for the full hour. When I make these, I'll grate the zucchini and then take a shower and get ready for the day and then make the waffles.
